beat on medium speed for 2 minutes
add in 2 tbsp icing sugar and vanilla extract
now beat on high speed for 2-3 minutes, do not over whip
remove from bowl and set this aside
in the same bowl beat cream cheese on slow speed until smooth
add 1 1/2 cups of icing sugar in 2-3 portions and beat to until just combined
consistency should be like this
Fold whipped cream into cream cheese mixture in two batches
put in fridge to set for about 30-40 minutes before you use it on your cakes or cupcakes.
